ALL PASTA IS VEGAN
Penne Pasta Salad
Ingredients:
1/2 cup fine chopped celery
1/4 cup shredded carrots
1 cup sliced assorted peppers
1 cup cherry tomatoes
1 TBSP chopped parsley
1 TSP chives
1/4 cup olive oil
2 TBSP red vinegar
salt and pepper
Method:
Cook pasta in boiling water (10-12 minutes), let cool do not rinse, in large mixing bowl add vegetables chopped, oil, vinegar, salt and pepper, herbs to taste, blend well.
