ALL PASTA IS VEGAN
Jalapeno Lime Pasta w/Grilled Shrimp
Ingredients:
1/2 Lb grilled shrimp
1 medium shallot-minced
assorted colored peppers
diced small mango
1/4 cup chopped fresh chives
1-pint heavy cream
1/2 cup white wine
2 cups chopped kale
Method:
Cook pasta in boiling water (7-10 minutes),
In a large sauce pot add one tablespoon butter, cook shallots, add wine, reduce by half, add peppers, heavy cream then let simmer until sauce coats the back of the spoon. Add kale and let wilt, turn off heat then toss with pasta and grilled shrimp. Sprinkle chives over the top. Salt, pepper and cheese to taste.
