ALL PASTA IS VEGAN
Butternut Squash Pasta
Ingredients:
1 medium shallot
1 cup diced tomato
1/2 cup of broken pecan
3 cups baby spinach
.25 cup chopped chives
.25 cup olive oil
grilled chicken optional
Method:
Cook pasta in boiling water (7-10 minutes),
In a large sauce pot add one tablespoon olive oil, sauté shallots and pecans until golden, add spinach, then cover let wilt. Add remaining ingredients toss with your pasta.
